Sweet Couscous
Have you ever had sweet couscous? If not, please give this recipe a try! I promise you will not be disappointed. Sweet milky couscous gives a similar vibe to a warm bowl of porridge, rice pudding or any other sweet comforting dish that anyone with a sweet tooth would appreciate for breakfast or as a healthy and filling snack.
The main star of the show is — you guessed it: Couscous! Lets dive into the health benefits of this grain: Couscous is rich in selenium, a powerful antioxidant that helps your immune system stay strong and may reduce inflammation. On top of that, couscous contains fiber to support healthy digestion and keep you feeling satisfied longer. The protein count in this recipe comes to around 11g just for the couscous, not bad for breakfast right? I love that couscous is super quick and easy to prepare, perfect for busy mornings.
Let’s move on to another staple I always keep in my cupboard: Cacao nibs.
Cacao nibs may be tiny, but they are packed with goodness! These little pieces of crushed cacao beans are basically chocolate in its purest form — without the sugar and processing. They’re loaded with antioxidants, minerals like magnesium and iron, and even provide a nice boost of plant-based fiber. I love them because they add a rich, slightly bitter chocolate flavor and a satisfying crunch, whether sprinkled over smoothie bowls, baked into treats, or just eaten as a snack straight from the jar.
To make sweet couscous it really could not be easier or faster. I find that if I use a small pot and only make one portion of sweet couscous for myself, the milk heats up within seconds.
Oh and one other very important note: You need to sweeten the couscous together with the milk right at the start - do not skip this step!
If you are using a sweetened milk like almond milk or soy milk, you may not need to add any sugar. Although I cook and eat very healthy, a tiny teaspoon of sugar makes a huge difference to the taste of this recipe. It will go from regular boring unflavored couscous to WOW this tastes like dessert.

Sweet Couscous
Kochutensilien
- 1 small to medium sized pot
Zutaten
- ⅓ cup Couscous
- ⅔ cup Milk of choice (double amount of couscous)
- 1 tsp. Vanilla Sugar or Brown Sugar (or a sweetener of choice e.g. maple syrup)
- 1 Tbsp. Cacao Nibs
- 1 tsp-Tbsp. Hazelnut Butter or Almond Butter
- 1 Banana (or pear, or apple, or berries...)
Anleitungen
- To a pot add couscous, milk and stir in the vanilla sugar. Bring it to a boil (it does not take very long so better not run away from the stove)
- Right after it started to boil turn the heat off completely and remove the pot from the stove. Cover pot with the lid and let the couscous absorb the milk for ~6min
- Done! The couscous should be nice and soft by now. Transfer to your favorite bowl and top with cacao nibs, banana and hazelnut butter - trust me with this combination, it tastes like dessert!

Adding the cacao nibs on top of the hot milky couscous slowly will melt them which results in a deeper chocolate flavor. You can of course substitute the cacao nibs for (dark) chocolate chips. If I crave this comforting bowl of happiness in the summer I love using mango as a topping and switch hazelnut butter for almond butter. Any of your favorite fruit and nut butter combinations will work though!
