Lentil Salad with Tahini Dressing

Lentil Salad with Tahini Dressing

Zutaten  

  • 1 Can Brown lentils
  • ½ Cucumber
  • 1 Bell pepper
  • 1 Avocado
  • Salad (Salad mix, rocket, lamb's lettuce)

Dressing

  • 2 Tbsp Tahini or alternatively: Peanut Butter
  • ½ juiced Lemon or Lime
  • 1-2 tsp. Soy sauce
  • 1 tsp. Honey (optional)
  • Splash of hot water if needed

Anleitungen 

  • Rinse and drain the canned brown lentils and add to a bowl (this recipe makes two portions so either divide into two bowls or mix it together in one big bowl). Wash your favorite salad and add to the bowl.
  • Wash and chop up your veggies.
  • For the dressing: mix all of the ingredients togehter, add hot water if needed to help mix the tahini or peanut butter. The dressing should be nice and creamy but still kind of runny.
