Chickpea Medley

This recipe could not be easier! I came up with this incredibly quick and easy lunch during the summer when I was short on ingredients and had very limited time to whip something up. Let's jump right in:

Chickpea Medley

Gesamtzeit 5 Minuten
Gericht Bowl, High-Protein, Lunch

Zutaten  

  • 1 can Chickpeas
  • 2-3 Large vine tomatoes
  • alternatively red bell pepper
  • 1 White onion
  • optional Feta cheese
  • (Lemon) olive oil, white balsamic vingegar, salt, pepper

Anleitungen 

  • Drain and rinse chickpeas. Chop up onion into rings and quarter the tomatoes.
  • Crumble up the feta on top of the chickpea medley. Season with lemon olive oil or regular olive oil, white balsamic vingear (optional), salt and pepper. Enjoy!
